Perfect Fish & Chips (using vodka & beer) Fish'n'Chips Recipe

Want to make perfect fish’n’chips at home? Well, using this recipe you will be able to make the perfect fish’n’chips, just like you get from your local fish’n’chips shop at home anytime. All thanks to the addition of the secret ingredient. You definitely have to give them a try.

4 boneless cod fillets
2 sausages ( I used Johnsonville Sausages)
6 scallops
120g plain flour
100g rice flour
1 tsp baking powder
130ml lemon sour (usually 5-8% alcohol) /lemon chūhai/ a similar vodka based carbonated drink.
170ml lager
Salt and pepper
1 tsp honey
vegetable oil for deep fryer
Thick cut chips

Instructions:
In a large bowl, mix both flours, baking powder and honey.
Gradually add Chūhai ( or equivalent) and lager.
Mix together only until the batter binds together and is smooth. Be careful not to over-mix. Look for a double cream consistency.
Season the fish with salt and pepper, then cover your fish with a dusting of plain flour, then drop into the batter and coat completely.
Pre-heat vegetable oil in deep fryer to 180C.
Once fish is coated with batter, gently place into the deep fryer and cook until golden and crispy (around 6 to 8 mins) until golden and crispy.
Remove from fat and drain.
Repeat the process for the sausage and scallops ( these will take less time of course so keep and eye on them).
Fry chips until golden brown

Note from Wiki: Chūhai (チューハイ or 酎ハイ), often sold as Chu-Hi as a canned drink, is an alcoholic drink originating from Japan. The name chūhai is an abbreviation of "shōchū highball" (焼酎ハイボール). Traditional chūhai is made with shōchū and carbonated water flavored with lemon, though some modern commercial variants use vodka in place of shōchū. The flavors available have recently multiplied, including lime, grapefruit, apple, orange, pineapple, grape, kyoho grape, kiwi, ume, yuzu, lychee, peach, strawberry cream, and cream soda.
For the chūhai sold in bars and restaurants, the alcohol content can be quite low, allowing those with a low tolerance for alcohol to drink safely. Canned chūhai, however, can have alcohol levels as high as 12% (24 proof) and is often sold in convenience stores and vending machines.

Takara Sake produces two flavors (white peach and grapefruit) of bottled chuhai under the JPOP label that are available in the United States. Sangaria also produces two flavors (lemon and grapefruit) of canned chuhai for the US market.
